Happy Black Woman Cooks: Lemon-Garlic Spinach

Today, I made my first home-cooked meal in Baltimore: salmon, lemon-garlic spinach and brown rice. I’m so happy that the place I’m staying in has kitchen privileges. My new landlords are definitely foodies; they have a beautiful, renovated “open” kitchen with every cooking tool I’d ever need in there!

Over the weekend, I had gone to the super Walmart down the street to buy a few things for the week and was amazed I was able to find a BAG of MEYER lemons for just $2! Now I just have to find a ton of recipes to use them in LOL. Meyer lemons are described as a cross between a lemon and an orange. It was my first time cooking with them and the lemon definitely made the meal – it gave the spinach a smooth, slightly sweet taste. I thought Meyer lemons were just for desserts but they worked really well with the spinach and salmon I ended up making to go along with it.

Here’s the spinach recipe. It was the star of tonight’s dinner and only took about seven minutes to cook!

Lemon-Garlic Spinach

Ingredients:

  • 1 bag or container of fresh spinach
  • 2 tablespoons of olive oil
  • 2 tablespoons minced garlic
  • 1/2 of a Meyer lemon (or any lemon, really)
  • Freshly ground black pepper and salt, to taste

Directions:

Heat a large pan or wok on medium heat. Saute your garlic for about one minute. Then throw the whole bag of spinach in the pan and toss with the garlic and oil, about two minutes.

Add the lemon, making sure to squeeze the juice out a few times with your hand.

Now go ahead and add your black pepper and salt; let cook for two minutes more or until spinach is wilted and tender.

You can eat this dish alone or with brown rice alongside a simply prepared piece of salmon, like I did this evening. It’s yummy. And quick! The whole meal only took about 30 minutes in all, including the rice.

  1. Looks good! As much as I hate to admit this, I never tasted fresh spinach til I moved out on my own. My mother only cooked canned spinach. But now, I only eat fresh spinach. I will add lemon the next time I make mine =)
